For the crust:

1 ½ cups chocolate cookie crumbs

½ cup unsalted butter, melted

2 tablespoons granulated sugar

For the cheesecake layer:

2 cups cream cheese, softened

1 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

½ cup sour cream

For the chocolate mousse layer:

1 cup heavy cream

8 oz semi-sweet chocolate, chopped

2 tablespoons granulated sugar

1 teaspoon vanilla extract

For garnish:

Whipped cream

Chocolate shavings or cocoa powder

Prepare the crust: Preheat your oven to 350°F (175°C). In a medium bowl, combine chocolate cookie crumbs, melted butter, and sugar. Mix until the crumbs are well-coated. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then allow it to cool completely.

    Make the cheesecake layer: In a large mixing bowl, beat cream cheese and granulated sugar until creamy and smooth. Add the eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream until fully combined. Pour the cheesecake mixture over the cooled crust.

      Bake the cheesecake: Place the springform pan in the oven and bake for 45-50 minutes, or until the center is set and slightly jiggly. Turn off the oven, crack the door slightly, and let the cheesecake cool in the oven for an hour. This will help prevent cracking. Once cooled, refrigerate for at least 4 hours, preferably overnight.

        Prepare the chocolate mousse: In a small saucepan over low heat, melt the chopped chocolate until smooth, stirring continuously. Remove from heat and let it cool slightly. In a separate bowl, whip the heavy cream, sugar, and vanilla extract until soft peaks form. Fold in the cooled chocolate until fully incorporated.

          Assemble the cheesecake: After chilling the cheesecake layer, spread the chocolate mousse evenly over the top of the cheesecake. Smooth out the surface with a spatula.

            Chill again: Cover the cheesecake with plastic wrap and refrigerate for another 2 hours until the mousse is set.

              Serve and garnish: Carefully remove the cheesecake from the springform pan. Top with whipped cream and garnish with chocolate shavings or a dusting of cocoa powder.
