4 cups water

2 tablespoons green tea leaves (Kashmiri Chai tea is preferred)

1/4 teaspoon baking soda

2 cups milk (whole or almond milk for a nutty twist)

1/2 cup heavy cream

1 teaspoon cardamom powder

1-2 tablespoons sugar (adjust to taste)

1/4 cup chopped pistachios (for garnish)

1/4 cup slivered almonds (for garnish)

A pinch of salt

Rose water (optional, for added fragrance)

Instructions
 

In a pot, bring the water to a rolling boil.

    Add the green tea leaves and baking soda to the boiling water. The baking soda will help release the color and flavor from the tea leaves, turning the water a deep red.

      Let the tea boil for about 10-15 minutes, stirring occasionally. You can add more water if it reduces too much.

        Once the water has reduced to about half its original volume, strain the tea into a large bowl or pot, discarding the tea leaves.

          Return the strained tea to the pot and slowly add the milk, stirring well.

            Bring the tea mixture to a boil again, then reduce the heat and let it simmer gently for another 5-10 minutes.

              Add the cardamom powder, sugar, and a pinch of salt, stirring until the sugar fully dissolves. If desired, add a few drops of rose water for an aromatic touch.

                To achieve the characteristic pink color, vigorously whisk the tea with a ladle or a traditional wooden whisk (called a 'chokar') for several minutes until it becomes frothy and creamy.

                  Pour the Kashmiri Pink Chai into serving cups. Garnish with chopped pistachios and slivered almonds on top before serving.
