4 large eggs

4 strips of bacon, chopped

1 cup mushrooms, sliced (use a mix of button and cremini for depth)

1/2 cup shredded cheddar cheese

2 tablespoons heavy cream

2 tablespoons fresh chives, chopped

1 tablespoon olive oil

Salt and pepper to taste

In a medium bowl, whisk together the eggs, heavy cream, salt, and pepper until well combined and fluffy.

    In a large non-stick skillet, heat the olive oil over medium heat. Add the chopped bacon and cook until crispy, about 5-7 minutes.

      Once the bacon is done, remove it from the skillet and set aside, leaving the rendered fat in the pan.

        Add the sliced mushrooms to the skillet and sauté in the bacon fat for about 5 minutes or until golden and tender. Season with a pinch of salt and pepper.

          Pour the egg mixture directly over the sautéed mushrooms in the skillet. Stir gently to combine.

            Allow the eggs to cook undisturbed for about 3-4 minutes until they start to set around the edges.

              Sprinkle the crispy bacon pieces and shredded cheddar cheese evenly on top of the omelette.

                Cover the skillet with a lid and let cook for an additional 2-3 minutes, or until the cheese is melted and the eggs are fully cooked through.

                  Carefully slide the omelette onto a plate or fold it in half. Garnish with fresh chives.
