In a food processor, combine the pitted dates and raw cashews. Pulse until the mixture is crumbly but starts to clump together.
Add the shredded coconut, lime juice, lime zest, vanilla extract, sea salt, and chia seeds to the processor. Blend everything together until a sticky, dough-like consistency is achieved. If the mixture is too dry, add a bit of water, a teaspoon at a time.
Once the mixture is well combined, use your hands to form small balls (about 1 inch in diameter) and place them on a parchment-lined baking sheet.
Refrigerate the energy bites for at least 30 minutes to allow them to firm up.
Once set, store the energy bites in an airtight container in the fridge; they can last up to a week.
