2 ribeye steaks (about 1 inch thick)

2 tablespoons olive oil

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon butter

1 lemon, zested and juiced

½ cup beef broth

1 cup assorted mushrooms (button, shiitake, or portobello), sliced

Instructions
 

Prepare the Marinade: In a small bowl, combine olive oil, minced garlic, chopped rosemary, thyme, smoked paprika, salt, and pepper. Mix well to create a marinade paste.

    Marinate the Steaks: Rub the marinade all over the ribeye steaks, ensuring they are evenly coated. Let them sit at room temperature for 30 minutes, or refrigerate for up to 2 hours.

      Cook the Steaks: Heat a cast-iron skillet over medium-high heat until very hot. Add the marinated steaks to the skillet. Cook for about 4-5 minutes on each side for medium-rare, adjusting time for your preferred doneness.

        Add Butter and Herbs: During the last minute of cooking, add butter to the skillet along with the lemon zest and half of the lemon juice. Baste the steaks with the buttery mixture for extra flavor.

          Sauté the Mushrooms: Remove the steaks from the skillet and let them rest for 5 minutes. In the same skillet, add sliced mushrooms and sauté for about 3-4 minutes until golden. Pour in the beef broth and remaining lemon juice; simmer until slightly thickened.

            Serve: Place the steaks on a plate, top with sautéed mushrooms, and drizzle the sauce from the pan over the top.
