Korean BBQ Meatballs

Ingredients
  

1 lb ground beef (or ground pork for variation)

1/4 cup panko breadcrumbs

2 tablespoons soy sauce

1 tablespoon sesame oil

2 tablespoons brown sugar

1 tablespoon minced garlic

1 tablespoon minced ginger

1/4 cup green onions, finely chopped

1 teaspoon Gochujang (Korean chili paste)

Salt and pepper to taste

1 tablespoon toasted sesame seeds (for garnish)

Sliced cucumber and carrots (for serving, optional)

Instructions
 

In a large mixing bowl, combine the ground meat, panko breadcrumbs, soy sauce, sesame oil, brown sugar, garlic, ginger, green onions, Gochujang, salt, and pepper. Mix until all ingredients are well incorporated.

    Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

      With wet hands, shape the meat mixture into golf ball-sized meatballs and place them on the prepared baking sheet. Place them evenly spaced apart.

        Bake the meatballs in the preheated oven for about 20-25 minutes, or until they are golden brown and cooked through (internal temperature of 160°F or 70°C).

          While the meatballs are baking, prepare a BBQ glaze by mixing 2 tablespoons of soy sauce, 1 tablespoon of brown sugar, and 1 teaspoon of Gochujang in a small saucepan over low heat until combined.

            Once the meatballs are cooked, remove them from the oven and drizzle the BBQ glaze over the top of the meatballs, then return them to the oven for an additional 5 minutes.

              Remove the meatballs from the oven and let them rest for a few minutes. Before serving, sprinkle toasted sesame seeds over the meatballs for garnish.
