1 cup all-purpose flour

1/2 cup powdered sugar (plus extra for dusting)

1/4 cup cornstarch

1/2 teaspoon salt

1/2 cup unsalted butter, softened

1 large egg

1/4 cup granulated sugar

1/4 cup fresh lemon juice

Zest of 1 lemon

1/2 teaspoon baking powder

1/2 teaspoon vanilla extract

Instructions
 

Preheat the oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, letting it hang over the edges for easy removal later.

    In a medium bowl, whisk together the flour, cornstarch, salt, and baking powder. Set aside.

      In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.

        Add the egg, lemon juice, lemon zest, and vanilla extract to the butter mixture. Mix until well combined.

          Gradually add the dry ingredients to the wet mixture, mixing just until incorporated. Avoid overmixing.

            Spread the cookie dough evenly into the prepared baking pan using a spatula.

              Bake in the preheated oven for 18-20 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.

                Allow the cookies to cool in the pan for about 10 minutes, then lift them out using the parchment paper and place on a wire rack to cool completely.

                  Once cooled, dust with powdered sugar before cutting into squares or bars.
