1 pre-made pie crust (9-inch)

1 cup granulated sugar

3 tablespoons cornmeal

1 tablespoon all-purpose flour

1/4 teaspoon salt

3 large eggs

1/2 cup freshly squeezed lemon juice (about 2-3 lemons)

Zest of 1 lemon

1/4 cup unsalted butter, melted

1 teaspoon vanilla extract

Powdered sugar for dusting (optional)

Preheat your oven to 350°F (175°C). Place the pre-made pie crust into a 9-inch pie pan, crimp the edges, and set aside.

    In a mixing bowl, whisk together the granulated sugar, cornmeal, flour, and salt until well combined.

      In a separate bowl, beat the eggs until frothy. Add the lemon juice, lemon zest, melted butter, and vanilla extract. Whisk until fully combined.
