1 cup all-purpose flour

1/2 cup granulated sugar

1/4 teaspoon baking soda

1 teaspoon baking powder

1/4 teaspoon salt

1/4 cup unsalted butter, softened

2 oz cream cheese, softened

1 large egg

1 teaspoon vanilla extract

Zest of 1 lemon

1/4 cup fresh lemon juice

1/2 cup milk

Optional: powdered sugar for dusting

Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly with cooking spray.

    In a large mixing bowl, whisk together the flour, sugar, baking soda, baking powder, and salt until well combined.

      In a separate bowl, beat the softened butter and cream cheese together until smooth and creamy using an electric mixer or a whisk.

        Add the egg, vanilla extract, lemon zest, and lemon juice to the cream cheese mixture. Mix until fully incorporated.

          Gradually add the dry ingredients to the wet mixture, alternating with the milk, starting and ending with the flour mixture. Mix just until combined; do not overmix.

            Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.

              Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.

                Once done, remove the muffins from the oven and allow them to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
