Ingredients

1 ½ cups all-purpose flour

2 teaspoons baking powder

¼ teaspoon salt

½ cup unsalted butter, softened

1 package (8 oz) cream cheese, softened

2 large eggs

Zest of 1 large lemon

¼ cup fresh lemon juice

1 teaspoon vanilla extract

½ cup powdered sugar (for glaze)

1 tablespoon milk (for glaze)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with cooking spray.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, granulated sugar, baking powder, and salt. Set aside.

Cream Butter and Cheese: In a large mixing bowl, beat the softened butter and cream cheese together until smooth and creamy.

Add Wet Ingredients: Beat in the eggs, lemon zest, lemon juice, and vanilla extract until well combined.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture. Stir until just combined; be careful not to overmix. The batter should be thick and slightly lumpy.

Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Glaze: Once baked, allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely. For the glaze, mix the powdered sugar and milk until smooth; drizzle over the cooled muffins.
