½ cup sugar

2 tablespoons lemon zest (about 2 lemons)

2 tablespoons fresh lemon juice

½ cup cream cheese, softened

1 large egg

½ cup vegetable oil

1 teaspoon vanilla extract

¼ cup milk

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or greased molds.

    In a medium mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
