2 cans (5 oz each) tuna in water, drained and flaked

1/2 cup breadcrumbs (plain or panko)

1/4 cup finely chopped fresh parsley

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

1 tablespoon lemon juice (freshly squeezed)

1 clove garlic, minced

1/2 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

1 large egg, beaten

2 tablespoons olive oil (for frying)

Lemon wedges and extra parsley for garnishing

Instructions
 

In a mixing bowl, combine the drained tuna, breadcrumbs, chopped parsley, mayonnaise, Dijon mustard, lemon juice, minced garlic, onion powder, paprika, salt, and pepper. Mix until all ingredients are well combined.

    Add the beaten egg to the mixture and mix until it's incorporated, helping bind the cakes together.

      Shape the mixture into small patties (about 2-3 inches in diameter) and place them on a plate. You should get approximately 6-8 cakes.

        Heat olive oil in a non-stick skillet over medium heat. Once hot, carefully place the tuna cakes in the skillet, making sure not to overcrowd the pan.

          Fry the cakes for about 3-4 minutes on each side or until they are golden brown and crispy. Adjust the heat if necessary to avoid burning.

            Once cooked, transfer the cakes onto a paper towel-lined plate to absorb any excess oil.

              Serve the lemon garlic tuna cakes warm, garnished with lemon wedges and a sprinkle of fresh parsley.
