1 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

Zest of 1 large lemon

2 tablespoons fresh lemon juice

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup fresh raspberries (or frozen, thawed)

1/2 teaspoon vanilla extract

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    Cream the Butter and Sugar: In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer until fluffy and light in color.

      Add Egg and Flavor: Beat in the egg, lemon zest, fresh lemon juice, and vanilla extract until well combined.

        Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.

          Combine Mixtures: Gradually fold the dry mixture into the wet mixture until just combined, being careful not to overmix.
