Ingredients
  

1 cup cooked white or brown rice

4 cups vegetable broth

1 medium onion, finely chopped

2 cloves garlic, minced

1 large carrot, diced

1 cup spinach, chopped

1 lemon (zested and juiced)

1 tablespoon olive oil

1 teaspoon dried thyme

1 teaspoon black pepper

Salt to taste

Fresh parsley, for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Add the minced garlic and diced carrot, cooking for an additional 3-4 minutes until fragrant and softened.

      Pour in the vegetable broth and bring it to a gentle boil.

        Stir in the cooked rice and spinach, then reduce the heat to a simmer.

          Add the lemon zest, lemon juice, dried thyme, black pepper, and salt. Stir well to combine all the ingredients.

            Allow the soup to simmer for about 10 minutes to let the flavors meld together, stirring occasionally.

              Once ready, taste and adjust seasoning if necessary.

                Serve hot, garnished with fresh parsley for a burst of color and flavor.
