1 cup quinoa, rinsed

2 cups vegetable broth

1 cup cucumber, diced

1 cup cherry tomatoes, halved

1 orange, segmented and juice reserved

1/4 cup red onion, finely chopped

1/4 cup parsley, finely chopped

1/4 cup mint leaves, finely chopped

3 tablespoons olive oil

2 tablespoons lemon juice

Salt and pepper to taste

Instructions
 

In a medium saucepan, bring vegetable broth to a boil. Add the rinsed quinoa, reduce heat to low and cover. Cook for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it cool.

    In a large mixing bowl, combine diced cucumber, cherry tomatoes, orange segments, red onion, parsley, and mint.

      Once the quinoa has cooled, fluff it with a fork and add it to the bowl with the vegetables and herbs.

        In a small bowl, whisk together reserved orange juice, olive oil, lemon juice, salt, and pepper.

          Drizzle the dressing over the quinoa salad and gently toss to combine all the ingredients well.

            Adjust seasoning if needed and let the salad sit for at least 15 minutes to allow flavors to meld before serving.
