4 large russet potatoes, peeled and diced

1 pound ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 cup shredded cheddar cheese

1 cup sour cream

1/2 cup milk

1/2 cup breadcrumbs

1 teaspoon seasoning salt

1 teaspoon black pepper

1/2 teaspoon paprika

1/2 teaspoon dried thyme

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large pot, boil the diced potatoes in salted water for about 15-20 minutes or until fork-tender. Drain and set aside.

      In a skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened and translucent, about 3-4 minutes.

        Add the ground beef to the skillet. Season with seasoning salt, black pepper, paprika, and thyme. Cook until browned and cooked through, breaking it apart with a spatula, approximately 7-10 minutes. Drain excess fat if necessary.

          In a large mixing bowl, combine the cooked potatoes, cooked beef mixture, sour cream, milk, and half of the shredded cheddar cheese. Mix until well combined.

            Transfer the potato and beef mixture into a greased baking dish and spread evenly.

              In a small bowl, combine the breadcrumbs with the remaining cheddar cheese to create a topping. Sprinkle this mixture evenly over the casserole.

                Bake in the preheated oven for about 25-30 minutes, or until the top is golden brown and bubbly.

                  Remove from the oven and let it cool for a few minutes before serving. Garnish with freshly chopped parsley for a pop of color.
