Ingredients

4 medium-sized russet potatoes

1 cup shredded sharp cheddar cheese

1/2 cup cooked bacon bits

1/4 cup sour cream

1/4 cup green onions, chopped

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon paprika

Salt and pepper to taste

Olive oil for drizzling

Fresh parsley for garnish (optional)

Instructions

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Wash and scrub the potatoes thoroughly under cold water, then dry them with a towel. Slice each potato into 1/4-inch thick slices.

In a large bowl, drizzle the potato slices with olive oil, then add garlic powder, onion powder, paprika, salt, and pepper. Toss well until all slices are evenly coated.

Arrange the potato slices in a single layer on the prepared baking sheet. Bake in the preheated oven for 25-30 minutes, or until the potatoes are golden and crispy, flipping halfway through.

Once baked, remove the potatoes from the oven and sprinkle them generously with the shredded cheddar cheese and bacon bits. Return to the oven for an additional 5-7 minutes, until the cheese is melted and bubbly.

Take out the potato slices and drizzle them with sour cream and sprinkle chopped green onions on top. Add additional salt and pepper if desired.

Garnish with freshly chopped parsley for an extra touch of color.
