1 pound ground beef

1 cup finely chopped onion

1/2 cup finely chopped bell pepper

1 cup breadcrumbs

2 large eggs

1/4 cup milk

2 tablespoons Worcestershire sauce

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon dried thyme

Salt and pepper to taste

1/4 cup ketchup (for topping)

1/4 cup shredded cheddar cheese (optional)

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and prepare a loaf pan by lightly greasing it with cooking spray.

    In a large mixing bowl, combine the ground beef, chopped onion, chopped bell pepper, and breadcrumbs.

      In a separate bowl, whisk together the eggs, milk, Worcestershire sauce, Dijon mustard, garlic powder, dried thyme, and season with salt and pepper.

        Pour the egg mixture into the meat mixture and combine everything gently until just mixed. Be careful not to overwork the meat.

          Transfer the mixture into the prepared loaf pan, shaping it into a loaf. Spread the ketchup evenly over the top of the meatloaf. If you’re using cheddar cheese, sprinkle it over the ketchup for an extra layer of flavor.

            Bake in the oven for 1 hour or until the internal temperature reaches 160°F (70°C).

              Once done, let the meatloaf rest for about 10 minutes before slicing. This will help retain its juices.

                Garnish with freshly chopped parsley if desired, and serve with your favorite sides.
