1 ripe mango, peeled and diced

1 dragon fruit (pitaya), peeled and diced

1 cup freshly squeezed lemon juice (about 4-5 lemons)

4 cups water

1/2 cup honey (or agave syrup for vegan option)

Ice cubes

Lemon slices and mint leaves for garnish

Instructions
 

In a blender, combine the diced mango and dragon fruit along with 1 cup of water. Blend on high until smooth.

    Strain the puree through a fine mesh sieve into a large pitcher to remove any pulp. You should have a smooth, bright mixture.

      Add the freshly squeezed lemon juice and honey to the pitcher. Stir well until the honey is fully dissolved.

        Pour in the remaining 3 cups of water and mix until everything is well combined. Taste and adjust sweetness if desired by adding more honey.

          Chill the mixture in the refrigerator for at least 30 minutes to let the flavors meld together.

            To serve, fill glasses with ice cubes and pour the mango-dragon fruit lemonade over the ice.

              Garnish each glass with lemon slices and a sprig of fresh mint before serving.
