ripe mangoes, peeled and diced

cup
fresh lime juice (about 4-5 limes)

sugar (adjust to taste)

coconut water (or water)

Instructions
In a blender or food processor, add the diced mangoes, lime juice, sugar, coconut water, and salt.
Blend until smooth and creamy, making sure all the mango pieces are well incorporated. Taste the mixture and adjust sugar if needed.
Pour the blended mixture into a shallow dish or ice cream maker. If using a shallow dish, freeze for about 30 minutes.
After 30 minutes, use a fork to scrape and stir the mixture well to break up any ice crystals that may have formed.
Return to the freezer and repeat the scraping process every 30 minutes for about 2-3 hours, until the sorbet is firm and fluffy.
If using an ice cream maker, follow the manufacturer’s instructions until the sorbet is churned and has a smooth texture.
Once ready, transfer the sorbet to an airtight container and freeze for an additional 1-2 hours to firm it up further.
Notes
Serve in chilled bowls or hollowed lime halves for a creative presentation.
