maple syrup

pecans, chopped

vanilla extract

Instructions
In a medium bowl or jar, combine the rolled oats and almond milk. Stir well to ensure all oats are submerged.
Add the maple syrup, vanilla extract, ground cinnamon, and a pinch of salt to the oat mixture. Stir until everything is well combined.
Gently fold in the chopped pecans, reserving a few for topping later.
Cover the bowl or jar with a lid or plastic wrap and refrigerate overnight (or for at least 4 hours).
In the morning, give the oats a good stir. If they seem too thick, add a splash more almond milk to achieve your desired consistency.
Serve in bowls and top with additional pecans and fresh fruit of your choice. Drizzle extra maple syrup on top if desired.
