1 pound ground beef or turkey

1 cup breadcrumbs

1/2 cup grated Parmesan cheese

1/2 cup onion, finely chopped

2 cloves garlic, minced

1 large egg

2 tablespoons Worcestershire sauce

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

4 cups mashed potatoes (about 2 lbs of potatoes)

1 cup shredded cheddar cheese

1/2 cup sour cream

1/4 cup milk

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C). Grease a 9x13 inch casserole dish.

    In a large mixing bowl, combine the ground meat, breadcrumbs, Parmesan cheese, chopped onion, minced garlic, egg, Worcestershire sauce, oregano, salt, and pepper. Mix until well combined but do not overmix to keep the meatloaf tender.

      Press the meat mixture into the bottom of the prepared casserole dish, forming an even layer.

        Bake the meatloaf layer in the preheated oven for 25-30 minutes, or until it's firm and no longer pink in the center.

          While the meatloaf is baking, prepare the mashed potatoes. If not already made, boil peeled potatoes until tender, then mash with sour cream, milk, and season with salt and pepper to taste.

            Once the meatloaf is cooked, remove it from the oven and spread the mashed potatoes evenly over the meatloaf layer.

              Sprinkle the shredded cheddar cheese on top of the mashed potatoes.

                Return the casserole to the oven and bake for an additional 15-20 minutes, until the cheese is melted and bubbly.

                  Remove from the oven and let it rest for about 5-10 minutes before serving. Garnish with fresh parsley if desired.
