Instructions
In a large mixing bowl, combine the rolled oats, shredded coconut, and matcha powder. Stir until well mixed.
In a separate bowl, mix together the almond butter, honey (or maple syrup), vanilla extract, and pinch of salt. Stir until the mixture is smooth and well combined.
Pour the wet ingredients into the dry ingredients and mix until fully incorporated. If using, fold in the chocolate chips for added sweetness and a little crunch.
Once the mixture is well combined, use your hands to form small balls, about 1 inch in diameter. If the mixture is too sticky, dampening your hands slightly can help.
Place the formed energy balls onto a baking sheet lined with parchment paper.
Refrigerate the energy balls for at least 30 minutes to firm up.
After chilling, store the energy balls in an airtight container in the fridge for up to one week.
Notes
Arrange the energy balls on a decorative plate and sprinkle with extra shredded coconut for an appealing look. They also make a great gift when packaged in small bags tied with a ribbon.
