Ingredients

1 can (15 oz) chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1/3 cup Kalamata olives, pitted and halved

1/4 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

3 tablespoons olive oil

2 tablespoons lemon juice

1 teaspoon dried oregano

Salt and pepper to taste

Instructions

In a large mixing bowl, combine the drained chickpeas, cherry tomatoes, cucumber, red onion, and Kalamata olives.

Gently toss the vegetables together to combine them evenly.

In a separate small bowl, whisk together olive oil, lemon juice, dried oregano, salt, and pepper until well mixed.

Pour the dressing over the salad mixture and gently stir to coat all the ingredients evenly.

Add the crumbled feta cheese and chopped parsley and fold them into the salad carefully to avoid breaking the feta.

Taste the salad and adjust seasoning if necessary, adding more salt, pepper, or lemon juice to your preference.

Allow the salad to rest in the refrigerator for at least 30 minutes before serving, as this will enhance the flavors.

Prep Time: 15 minutes | Total Time: 45 minutes (including chilling) | Servings: 4

                  - Presentation Tips: Serve the salad in a large, shallow bowl. Garnish with extra parsley and a few whole olives on top for an inviting look. Consider placing lemon wedges around the edge for a pop of color and an optional additional squeeze for guests.
