1 cup quinoa, rinsed

2 cups vegetable broth

1 cup cherry tomatoes, halved

1 cucumber, diced

1 cup bell peppers (red, yellow, or orange), diced

1/2 red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup olive oil

2 tablespoons lemon juice

1 teaspoon dried oregano

Salt and pepper to taste

Instructions
 

In a medium saucepan, bring the vegetable broth to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it cool.

    While the quinoa is cooling, prepare the vegetables. In a large mixing bowl, combine cherry tomatoes, cucumber, bell peppers, red onion, olives, feta cheese, and parsley.

      In a separate small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper to create the dressing.

        Once the quinoa is cool, fluff it with a fork and add it to the mixing bowl with the vegetables.

          Pour the dressing over the quinoa salad and gently toss everything together until well combined.

            Taste and adjust seasoning if necessary.

              Refrigerate the salad for at least 30 minutes to allow the flavors to meld before serving.
