4 fillets of white fish (such as cod or tilapia)

2 tablespoons olive oil

1 lemon, zested and juiced

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

1 cup cherry tomatoes, halved

1/2 cup Kalamata olives, pitted and chopped

1/4 cup fresh parsley, chopped

Optional garnish: lemon wedges

Instructions
 

Preheat your oven to 400°F (200°C).

    In a small bowl, mix together the olive oil, lemon zest, lemon juice, minced garlic, oregano, thyme, salt, and pepper.

      Place the fish fillets in a baking dish and pour half of the olive oil mixture over them, ensuring they are well-coated.

        Spread the halved cherry tomatoes and chopped Kalamata olives around the fish in the baking dish.

          Drizzle the remaining olive oil mixture over the tomatoes and olives.

            Bake in the preheated oven for 15-20 minutes or until the fish flakes easily with a fork and is opaque throughout.

              Once done, remove from the oven and sprinkle with fresh parsley for a burst of color and flavor.

                Serve immediately, optionally garnished with lemon wedges on the side.
