4 boneless, skinless chicken breasts

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

2 tablespoons olive oil

1 cup corn (fresh or frozen)

1 cup black beans, rinsed and drained

1 cup diced tomatoes (canned or fresh)

1 cup shredded Monterey Jack cheese

1 cup shredded cheddar cheese

1 tablespoon fresh cilantro, chopped (for garnish)

1 lime, cut into wedges

Instructions
 

Preheat your oven to 375°F (190°C).

    In a small bowl, mix together cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Rub this spice mix all over the chicken breasts, ensuring they are evenly coated.

      In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the spiced chicken breasts and sear for about 5 minutes on each side until golden brown. Remove from heat and set aside.

        In the same skillet, add the corn, black beans, and diced tomatoes. Stir to combine and bring to a light simmer for 3-4 minutes.

          Place the browned chicken breasts back into the skillet atop the vegetable mixture.

            Sprinkle the shredded Monterey Jack and cheddar cheeses evenly over the chicken and vegetable mixture.

              Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is bubbly and slightly golden.

                Once done, remove from the oven and let it sit for 5 minutes before serving.

                  Garnish with fresh cilantro and serve with lime wedges on the side.
