2 cups corn (fresh, frozen, or canned)

1 can (15 oz) white beans, drained and rinsed

1 cup diced red bell pepper

1 cup diced onion

4 cloves garlic, minced

4 cups chicken broth

1 cup heavy cream (or coconut milk for a dairy-free option)

1 tablespoon chili powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste

1/4 cup fresh cilantro, chopped (for garnish)

1/2 cup queso fresco or feta cheese, crumbled (optional)

Lime wedges (for serving)

Instructions

In a large pot over medium heat, add a drizzle of olive oil and sauté diced onion and red bell pepper for about 5 minutes or until the onion becomes translucent.

Stir in the minced garlic and cook for an additional minute until fragrant.

Add the shredded chicken, corn, white beans, chicken broth, chili powder, cumin, and smoked paprika to the pot. Stir well to combine.

Bring the mixture to a gentle simmer. Reduce heat to low and let it cook for 15-20 minutes, stirring occasionally.

Remove from heat and serve hot, garnishing each bowl with crumbled queso fresco or feta, fresh cilantro, and a squeeze of lime juice.
