Ingredients

1 cup graham cracker crumbs

4 tablespoons unsalted butter, melted

2 tablespoons sugar

2 ripe bananas, sliced

1 box (3.4 oz) instant vanilla pudding mix

2 cups milk

1 teaspoon vanilla extract

1 cup heavy cream

2 tablespoons powdered sugar

Mini chocolate chips (for garnish)

Instructions

Prepare the Crust: In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until the crumbs are well coated.

Form the Base: Press the crumb mixture evenly into the bottom and sides of mini pie tins (or silicone cupcake molds) to create a crust. Bake in a preheated oven at 350°F (175°C) for 8-10 minutes until lightly golden. Allow to cool completely.

Make the Pudding: In a separate bowl, whisk together the instant vanilla pudding mix and milk until it thickens, about 2 minutes. Stir in the vanilla extract.

Layer the Bananas: Once the crusts are cool, place a layer of banana slices at the bottom of each crust. Pour the vanilla pudding mixture over the bananas, filling the crusts almost to the top.

Whip the Cream: In a mixing bowl, beat the heavy cream and powdered sugar until soft peaks form.

Top the Pies: Spoon or pipe the whipped cream over the pudding layer in each mini pie.

Add Finishing Touches: Sprinkle mini chocolate chips on top for garnish and additional flavor.

Chill and Serve: Refrigerate the pies for at least 1 hour before serving to set.

Prep Time: 20 minutes | Total Time: 1 hour 30 minutes | Servings: 6 mini pies

                    - Presentation Tips: Serve on a decorative platter, and place a mint leaf on top of each pie for a pop of color.
