1 cup cooked, shredded chicken

1 cup shredded cheese (cheddar and Monterey Jack blend works best)

1 small red bell pepper, finely diced

1 small jalapeño, seeded and minced

1/4 cup red onion, finely chopped

1 tablespoon olive oil

4 small flour tortillas (6 inches diameter)

1/2 cup sour cream (for serving)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

In a skillet over medium heat, add the olive oil. Once hot, sauté the diced red bell pepper, jalapeño, and red onion for about 3 minutes until they soften.

    In a mixing bowl, combine the shredded chicken with the sautéed vegetables. Mix in half of the shredded cheese and season with salt and pepper to taste.

      Heat a clean skillet over medium heat. Place one tortilla in the skillet and layer half of the chicken mixture on one half of the tortilla. Sprinkle with a little more cheese before folding the other half of the tortilla over the filling.

        Cook for about 3 minutes or until the tortilla is golden brown. Carefully flip and cook for an additional 2-3 minutes until the other side is golden and the cheese has melted.

          Remove from the skillet and repeat the process with the remaining tortillas and filling.

            Once all quesadillas are cooked, allow them to cool slightly before cutting them into quarters.

              Serve with sour cream on the side, and garnish with fresh cilantro and lime wedges.
