2 tablespoons cocoa powder

4 large egg yolks

1/2 cup granulated sugar

1 cup mascarpone cheese

1 cup heavy whipping cream

1 teaspoon vanilla extract

24 ladyfinger cookies

1/4 cup dark chocolate shavings (for garnish)

Instructions
 

Prepare Coffee Mixture: In a shallow dish, mix the cooled espresso with cocoa powder until well combined. Set aside.

    Make Egg Mixture: In a medium bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and creamy. This should take about 3-5 minutes.

      Incorporate Mascarpone: Gently fold the mascarpone cheese into the egg mixture until smooth and creamy, being careful not to deflate the eggs.

        Whip Cream: In a separate bowl, whip the heavy cream and vanilla extract until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until fully combined.

          Dip Ladyfingers: Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy. Arrange a layer of dipped ladyfingers in the bottom of a 9x9-inch baking dish.

            Layer the Cream: Spread half of the mascarpone mixture over the layer of ladyfingers, smoothing it out with a spatula.

              Repeat Layers: Add another layer of dipped ladyfingers over the cream, followed by the remaining mascarpone mixture on top. Smooth the final layer.

                Chill: Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight to allow the flavors to meld.

                  Serve: Just before serving, dust the top with extra cocoa powder and sprinkle dark chocolate shavings for added elegance and a chocolatey crunch.
