2 cups cream cheese, softened

1 cup powdered sugar

1 cup heavy whipping cream

½ cup orange juice

Zest of 1 large orange

1 tablespoon vanilla extract

1 tablespoon gelatin (unflavored)

3 tablespoons water

Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs and melted butter. Stir until the crumbs are thoroughly coated. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Place in the refrigerator to set while you prepare the filling.

    Bloom the Gelatin: In a small bowl, combine the unflavored gelatin and water. Let it sit for about 5 minutes until it blooms (absorbs the water).

      Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Add the powdered sugar, vanilla extract, orange juice, and orange zest. Continue to mix until fully incorporated.

        Incorporate Whipped Cream: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until no white streaks remain.

          Add Gelatin: Gently heat the bloomed gelatin in the microwave for about 10-15 seconds until liquid. Allow it to cool slightly, then slowly add it to the cream cheese mixture while gently folding to combine.

            Combine and Chill: Pour the cheesecake filling over the prepared crust in the springform pan, spreading it evenly with a spatula. Cover with plastic wrap and refrigerate for at least 4 hours, or until set.
