2 pounds beef chuck, cut into 1-inch cubes

3 tablespoons olive oil

1 large onion, chopped

3 cloves garlic, minced

4 carrots, sliced

3 stalks celery, chopped

3 medium potatoes, diced

4 cups beef broth

2 tablespoons tomato paste

2 teaspoons dried thyme

1 teaspoon smoked paprika

2 bay leaves

Salt and pepper to taste

1 tablespoon Worcestershire sauce (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

In a large Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes in batches, browning all sides. Remove the beef and set aside.

    In the same pot, add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute.

      Add the sliced carrots and chopped celery to the pot, stirring to combine. Cook for another 3-4 minutes until the vegetables begin to soften.

        Return the browned beef to the pot and stir in the diced potatoes, beef broth, tomato paste, dried thyme, smoked paprika, and bay leaves. If using, add the Worcestershire sauce for extra depth of flavor.

          Season with salt and pepper to taste. Bring the mixture to a boil, then lower the heat to a simmer. Cover the pot and let it cook for about 1.5 to 2 hours, stirring occasionally, until the beef is tender and the flavors meld together.

            Once cooked, remove the bay leaves and adjust seasoning if necessary.

              Serve hot, garnished with fresh chopped parsley.
