2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 cup unsalted butter, cold and cubed

3/4 cup buttermilk, cold

1 tablespoon honey (optional)

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

    In a large bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

      Add the cold, cubed butter to the flour mixture. Using a fork or a pastry cutter, cut the butter into the flour until the mixture resembles coarse crumbs with some larger pieces remaining.

        If using honey, mix it into the cold buttermilk. Gradually pour the buttermilk into the flour mixture, stirring gently with a fork until just combined. Do not overmix; the dough should be slightly sticky.

          Turn the dough onto a well-floured surface and gently knead it 4-5 times until it comes together. Pat it into a rectangle about 1 inch thick.

            Using a floured biscuit cutter (or a glass), cut out biscuits. Reroll the scraps to cut additional biscuits. Place them on the prepared baking sheet, close together but not touching.

              Bake in the preheated oven for 12-15 minutes or until the tops are golden brown.

                Remove from the oven and let cool slightly. Serve warm with butter or jam of your choice.
