4 boneless, skinless chicken breasts

1 cup balsamic vinegar

2 tablespoons honey

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 tablespoon olive oil

Salt and pepper to taste

2 cups cherry tomatoes, halved

1 cup fresh basil leaves

1 cup spinach leaves

Instructions
 

In a bowl, whisk together the balsamic vinegar, honey, minced garlic, oregano, thyme, salt, and pepper. This will be your marinade.

    Place the chicken breasts in a large resealable plastic bag and pour the marinade over the chicken. Seal the bag and ensure the chicken is well coated. Marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

      Heat olive oil in a large oven-safe skillet over medium-high heat. Once hot, remove the chicken from the marinade (reserve the marinade) and sear the chicken for 5-6 minutes on each side until golden brown. You may need to do this in batches if your skillet isn't large enough.

        Once seared, add the cherry tomatoes to the skillet around the chicken. Pour the reserved marinade over the chicken and tomatoes.

          Transfer the skillet to a preheated oven at 400°F (200°C) and roast for 20-25 minutes or until the chicken is fully cooked and has an internal temperature of 165°F (74°C).

            Remove the skillet from the oven and stir in the fresh spinach and basil leaves. Allow them to wilt in the residual heat for about 2-3 minutes.

              Serve the chicken and tomatoes on a plate, spooning the pan juices over the top, and garnish with additional fresh basil if desired.
