4 boneless, skinless chicken breasts

1 lb baby potatoes, halved

1/2 cup grated Parmesan cheese

4 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large bowl, whisk together the olive oil, minced garlic, grated Parmesan cheese, oregano, paprika, salt, and pepper until well combined.

      Add the chicken breasts to the bowl and coat them evenly with the garlic Parmesan mixture.

        Next, place the halved baby potatoes in the same bowl or a separate mixing bowl, and toss them with any remaining marinade or a splash of olive oil if needed. Season lightly with salt and pepper.

          Arrange the chicken breasts on one side of a large baking sheet and the seasoned potatoes on the other side. Make sure they are in a single layer to cook evenly.

            Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F) and the potatoes are tender.

              For a golden finish, broil for an additional 2-3 minutes at the end of cooking.

                Remove from the oven and let it rest for 5 minutes. Garnish with fresh parsley if desired before serving.
