In a large skillet, heat the olive oil over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes. Remove the sausage from the skillet and set aside.
In the same skillet, add the diced onion and bell pepper. Sauté for about 3-4 minutes until the vegetables are softened.
Add the minced garlic and cook for an additional 1 minute, until fragrant.
Stir in the rice, cooked sausage, diced tomatoes (with their juices), chicken broth, paprika, cumin, salt, and pepper. Bring to a boil.
Once boiling, reduce the heat to low, cover the skillet, and let it simmer for about 20 minutes, or until the rice has absorbed the liquid and is tender.
After the rice is cooked, stir in the frozen peas and cover again for 5 more minutes to thaw the peas.
Remove from heat, fluff the rice with a fork, and garnish with chopped parsley before serving.
