1 small head of green cabbage, shredded

1 large onion, diced

2 carrots, diced

3 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream or coconut cream for a dairy-free option

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

1 bay leaf

Fresh parsley for garnish

Instructions
 

Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté for about 3-5 minutes until translucent.

    Stir in the carrots and garlic, cooking for an additional 2-3 minutes until fragrant.

      Add the shredded cabbage to the pot and mix well with the other vegetables. Sauté for about 5 minutes until the cabbage starts to soften.

        Pour in the vegetable broth, then add the bay leaf, thyme, smoked paprika, salt, and pepper. Stir well to combine.

          Raise the heat and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer uncovered for about 20 minutes until the cabbage is tender.

            Remove the bay leaf, then stir in the heavy cream (or coconut cream). Allow the soup to warm through for another 5 minutes.

              Taste and adjust the seasoning if necessary.

                Serve hot, garnishing each bowl with freshly chopped parsley.
