8 slices of whole grain bread, cubed

6 large eggs

2 cups milk (or dairy-free alternative)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1 cup shredded cheddar cheese

1 cup cooked and crumbled breakfast sausage (or diced vegetables for a vegetarian option)

1/2 cup diced bell peppers (red and green for color)

1/4 cup chopped green onions

Optional: hot sauce for serving

In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined.

    Lightly grease a 9x13 inch baking dish with cooking spray or olive oil.

      Spread the cubed bread evenly across the bottom of the baking dish.

        Top the bread with the crumbled sausage (or vegetables), sautéed bell peppers, and shredded cheese, distributing them evenly.

          Pour the egg mixture over the top, ensuring all bread cubes are soaked. You may gently press the bread down with a spatula for even soaking.

            Cover the dish with plastic wrap and refrigerate overnight (or for at least 4 hours if you lack time).

              Preheat your oven to 350°F (175°C).

                Remove the casserole from the refrigerator and let it sit at room temperature while the oven preheats.

                  Bake uncovered for 40-45 minutes, or until the casserole is golden brown and a knife inserted in the center comes out clean.

                    Allow the casserole to cool for 5 minutes before slicing and serving.
