6 large croissants, torn into pieces

6 large eggs

2 cups whole milk

1 cup shredded cheddar cheese

1 cup diced cooked ham or cooked bacon

1 cup fresh spinach, chopped

1 teaspoon Dijon mustard

1 teaspoon garlic powder

Salt and pepper to taste

1 tablespoon fresh chives, chopped (for garnish)

Instructions
 

Begin by tearing the croissants into bite-sized pieces and place them evenly in a greased 9x13 inch baking dish.

    In a large mixing bowl, whisk together the eggs, milk, Dijon mustard, garlic powder, salt, and pepper until fully combined.

      Pour the egg mixture over the croissant pieces, ensuring they are evenly coated.

        Sprinkle the diced ham or bacon, chopped spinach, and shredded cheddar cheese over the top of the croissant and egg mixture.

          Gently press down on the ingredients a bit with a spatula to ensure the croissants soak up the egg mixture well.

            Cover the dish with plastic wrap or foil and refrigerate it overnight (or for at least 4 hours) to allow flavors to meld and the croissants to soak.

              When ready to bake, preheat your oven to 350°F (175°C).

                Remove the cover from the casserole and bake for 35-40 minutes, or until the top is golden and the center is set.
