Salt and pepper to taste

2 tablespoons olive oil

2 cups fresh spinach, washed and dried

1 clove garlic, minced

1/4 cup heavy cream

1/4 cup grated Parmesan cheese

1 tablespoon lemon juice

Zest of 1 lemon

Pinch of nutmeg

Prepare the Salmon: Pat the salmon fillets dry with a paper towel. Season both sides generously with salt and pepper.

    Heat the Oil: In a large skillet, heat olive oil over medium-high heat until shimmering.

      Sear the Salmon: Place the salmon fillets skin-side down in the skillet. Cook for about 4-5 minutes, without moving them, until the skin is crispy.

        Flip the Salmon: Carefully flip the salmon using a spatula and cook for an additional 3-4 minutes, or until the salmon is cooked to your liking. Remove from the skillet and set aside to keep warm.

          Sauté the Spinach: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the spinach and cook until just wilted, about 1-2 minutes.

            Make the Sauce: Reduce the heat to medium-low. Stir in the heavy cream, Parmesan cheese, lemon juice, lemon zest, and a pinch of nutmeg. Cook for 2 minutes, stirring constantly until the sauce is heated through and slightly thickened.

              Combine: Return the salmon fillets to the skillet, spooning the sauce over them to warm through for an additional minute.

                Serve: Plate the salmon with the creamy spinach sauce drizzled over the top.
