Parmesan crusted potatoes are a tasty side dish. They are crispy outside and soft inside. To make them, start with baby potatoes. I love using baby potatoes because they are small and cook fast. You will need about 1.5 pounds, and you should cut them in half. This helps them cook evenly.

Ingredients

1.5 pounds baby potatoes, halved

1 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

3 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

In a large mixing bowl, combine the halved baby potatoes with olive oil and toss well until evenly coated.

In a separate bowl, mix together the grated Parmesan cheese, garlic powder, onion powder, dried oregano, paprika, salt, and black pepper.

Sprinkle the cheese mixture over the coated potatoes and toss again, ensuring the cheese adheres well to each potato half.

Spread the coated potatoes in a single layer on the prepared baking sheet, cut side up.

Bake in the preheated oven for 25-30 minutes, or until the potatoes are tender and the cheese crust is golden and crispy.

Remove from the oven and garnish with fresh chopped parsley before serving.
