1 cup pastina (tiny pasta)

6 cups vegetable broth

1 medium onion, finely diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 cup fresh spinach, chopped

1/2 cup peas (fresh or frozen)

1 teaspoon dried thyme

1 teaspoon lemon zest

2 tablespoons olive oil

Salt and pepper to taste

Grated Parmesan cheese (for serving)

Fresh basil leaves (for garnish)

Prep the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables soften and the onion becomes translucent.
