1 1/2 cups graham cracker crumbs

1/2 cup unsalted butter, melted

1/4 cup granulated sugar

2 packs (8 oz each) Philadelphia cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

2 large eggs

1/4 cup sour cream

1 tablespoon lemon juice

Fresh berries (strawberries, blueberries, or raspberries) for topping

Preheat your oven to 325°F (163°C). Grease and line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.

    In a medium bowl, mix together the graham cracker crumbs, melted butter, and granulated sugar until well combined.

      Press the mixture firmly into the bottom of the prepared baking pan to form a crust. Bake for 8-10 minutes until slightly golden, then remove from the oven and let cool.

        While the crust cools, in a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

          Gradually add the powdered sugar and mix until fully incorporated.

            Stir in the vanilla extract, then add the eggs one at a time, mixing well after each addition.

              Fold in the sour cream and lemon juice until the mixture is smooth.

                Pour the cheesecake filling over the cooled crust and spread it evenly with a spatula.

                  Bake for 25-30 minutes, or until the center is set and a slight jiggle remains. Turn off the oven and let the cheesecake bars cool in the oven for about 30 minutes with the door ajar.

                    Once cooled, refrigerate for at least 4 hours or overnight for the best texture.

                      When ready to serve, lift the cheesecake out of the pan using the parchment paper and cut into squares. Top each bar with fresh berries.
