1 ripe pineapple, peeled and sliced

1 cup almond flour

1/2 cup coconut sugar

1/4 cup unsweetened shredded coconut

2 tablespoons melted coconut oil

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1 cup Greek yogurt

Fresh mint leaves for garnish

Instructions
 

Preheat the oven to 350°F (175°C) and line a tart pan with parchment paper.

    In a mixing bowl, combine the almond flour, coconut sugar, shredded coconut, melted coconut oil, vanilla extract, and ground cinnamon. Mix until you achieve a crumbly texture.

      Press the mixture firmly into the bottom and up the sides of the tart pan to form a crust. Bake for 10-12 minutes, or until golden brown. Remove from the oven and let cool completely.

        While the crust cools, prepare the pineapple. Grill the pineapple slices on a preheated grill or grill pan for about 2-3 minutes on each side until they have grill marks and become slightly caramelized.

          Once the crust is cool, layer the grilled pineapple slices on top of the crust, arranging them in a decorative pattern.

            Spoon Greek yogurt over the pineapple layer, spreading it evenly or creating peaks for a nice texture.

              Garnish with fresh mint leaves and a sprinkle of cinnamon on top.

                Refrigerate for at least 30 minutes to let the flavors meld together and serve chilled.
