1 ripe pineapple, peeled, cored, and cut into 1-inch chunks

1 cup all-purpose flour

1/4 cup cornstarch

1 tablespoon baking powder

1/4 teaspoon salt

2 tablespoons sugar

1/2 cup coconut milk (or regular milk)

1 large egg

1/2 teaspoon vanilla extract

Oil for frying (vegetable or coconut)

Powdered sugar for dusting

Optional: fresh mint leaves for garnish

Instructions
 

In a mixing bowl, whisk together the flour, cornstarch, baking powder, salt, and sugar until well combined.

    In another bowl, blend together the coconut milk, egg, and vanilla extract until smooth.

      Gradually add the wet mixture to the dry ingredients, mixing until a thick batter forms; avoid overmixing. The batter should coat the back of a spoon.

        Heat oil in a deep frying pan over medium heat until it reaches about 350°F (175°C). You can test if it’s ready by dropping a small amount of batter into the oil; it should bubble and rise to the surface.

          Dip each pineapple chunk into the batter, coating it completely, and gently drop it into the hot oil.

            Fry the fritters in batches to avoid overcrowding the pan, cooking for about 3-4 minutes each side until they are golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.

              Allow the fritters to cool slightly before dusting them with powdered sugar.

                Serve warm, garnished with fresh mint leaves if desired.
