Polish Potato Soup Recipe

4 large russet potatoes, peeled and diced

1 medium onion, finely chopped

2 cloves garlic, minced

3 cups vegetable broth

1 cup heavy cream

1 cup cooked and crumbled kielbasa or smoked sausage (optional)

2 tablespoons olive oil

1 teaspoon dried marjoram

Salt and pepper to taste

2 green onions, chopped (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onions and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the diced potatoes to the pot and pour in the vegetable broth. Bring to a boil, then reduce the heat to a simmer.

        Cook for about 15-20 minutes, or until the potatoes are tender when pierced with a fork.

          If using kielbasa or smoked sausage, add it to the pot during the last 5 minutes of cooking.

            Once the potatoes are soft, use an immersion blender to puree the soup until smooth. Alternatively, you can carefully transfer the soup to a blender in batches to achieve a creamy consistency.

              After blending, return the soup to low heat and stir in the heavy cream and dried marjoram. Let it warm through for a few minutes.

                Season with salt and pepper to taste. Adjust consistency with a bit of water or more broth if it’s too thick.

                  Serve hot and garnish each bowl with chopped green onions and fresh parsley.
