2-3 pounds of beef chuck roast

2 tablespoons olive oil

4 cloves garlic, minced

2 teaspoons onion powder

2 teaspoons garlic powder

1 tablespoon dried thyme

1 tablespoon smoked paprika

1 teaspoon black pepper

1 teaspoon salt

1 cup beef broth

Fresh rosemary sprigs for garnish (optional)

Instructions
 

Preheat your oven to 300°F (150°C).

    Pat the beef chuck roast dry with paper towels to ensure a nice sear.

      In a small bowl, mix together the minced garlic, onion powder, garlic powder, thyme, smoked paprika, black pepper, and salt.

        Rub the olive oil all over the roast, then generously apply the spice mixture, ensuring it’s evenly coated on all sides.

          In an oven-safe skillet or roasting pan, heat a bit of olive oil over medium-high heat. Sear the beef on all sides until browned (about 3 minutes per side).

            Pour the beef broth into the pan around the roast, avoiding the direct pour on the meat, so the seasoning stays intact.

              Cover the pan with aluminum foil or a lid and transfer to the preheated oven. Roast for about 3-4 hours, or until the meat is fork-tender and has reached an internal temperature of 190°F (88°C).

                Remove the roast from the oven, let it rest for at least 15 minutes before slicing. This will allow the juices to redistribute for optimal flavor.

                  Slice the meat against the grain and serve with the pan juices drizzled over the top. Garnish with fresh rosemary if desired.
