4 large russet potatoes, peeled and diced

1 medium onion, chopped

6 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream (or coconut cream for a dairy-free option)

2 tablespoons olive oil

1 teaspoon dried thyme

1 bay leaf

Salt and pepper to taste

Fresh chives, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.

    Stir in the minced garlic and continue to sauté for another 1-2 minutes until fragrant.

      Add the diced potatoes, vegetable broth, dried thyme, and the bay leaf to the pot. Bring to a boil, then reduce the heat and simmer for about 20 minutes or until the potatoes are tender.

        Once the potatoes are soft, remove the bay leaf. Use an immersion blender to puree the soup until smooth. (Alternatively, you can transfer the soup in batches to a countertop blender; just be cautious as it will be hot!)

          Return the blended soup to the pot if using a countertop blender. Stir in the heavy cream and let it heat through on low heat for about 5 minutes.

            Season the soup with salt and pepper to taste. If you desire a thinner consistency, add additional vegetable broth until you reach your preferred thickness.

              Serve hot, garnished with fresh chives on top.
