20 frozen potstickers (vegetable or pork)

6 cups chicken or vegetable broth

2 tablespoons soy sauce

1 tablespoon sesame oil

1 teaspoon ginger, grated

2 garlic cloves, minced

2 green onions, sliced (white and green parts separated)

1 cup bok choy, chopped

1 cup shiitake mushrooms, sliced

1 cup carrots, julienned

1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)

Salt and pepper to taste

Sesame seeds for garnish (optional)

In a large pot over medium heat, add the sesame oil. Once hot, sauté the minced garlic and grated ginger for about 1 minute until fragrant.

    Add the sliced white parts of the green onions, carrots, and mushrooms. Cook for 3-4 minutes until the vegetables begin to soften.

      Pour in the chicken or vegetable broth, soy sauce, and bok choy. Bring the mixture to a gentle boil.

        Carefully add the frozen potstickers to the pot. Allow them to cook in the broth for about 5-7 minutes, stirring occasionally, until the potstickers float and are fully heated through.

          If you prefer a thicker broth, stir in the cornstarch mixture and let it simmer for another 2 minutes until slightly thickened. Adjust seasoning with salt and pepper to taste.

            Remove from heat and stir in the green parts of the green onions.

              Ladle the soup into bowls and serve hot, garnished with sesame seeds if desired.
